Turkey Tacos

Taco shells/tortillas 10

Shredded cooked turkey 3-4 cups

Water 2/3 cup

Taco seasoning or your spice blend 1-2 Tbls.

Green onion 2-3 chopped

Shredded Jack or Cheddar cheese 2-3 cups

Add-ins or garnishes To your taste

Toss cooked turkey with the spices and heat in a skillet over medium heat with the water. Cook until bubbly and thick. Serve in warm taco shells and top with cheese, green onion and garnishes of your choice.

Turkey Quesadillas

Tortillas 8

Cooked Turkey 3-4 cups

Salsa 1-2 cups

Shredded Cheese 1-2 cups

Corn 1 cup

Green Onion ¼ cup

Mix turkey, salsa, corn, and green onion in a bowl until combined. Heat tortillas in a skillet over medium heat with a layer of cheese. Add the turkey filling and heat until warm. Fold in half, melt to seal and serve.

Turkey Pot Pie

Cooked Turkey 3-4 cups

Turkey Gravy 2-3 cups

Corn ¾ cup

Peas ¾ cup

Carrots 1 cup

Pie Crust 1 top

Mix all ingredients together in a bowl until combined. Place in a pie plate or shallow baking dish. Top with the pie crust and bake in a 375 degree oven until golden brown and bubbly.

Turkey Tetrazzini

Cooked Spaghetti 1 Lbs

Shredded Turkey 4-5 cups

Turkey Gravy 2-3 cups

Mushrooms 1 cup

Peas 1 cup

Shredded Cheddar Cheese 1 cup

Parmesan Cheese ½ cup

Breadcrumbs 1 cup

Olive Oil 2 Tbls

Combine the cheddar cheese and parmesan cheese with the olive oil in a bowl and set to the side. In a large pot combine the cooked pasta, turkey, mushrooms, peas, and gravy and heat over medium-low heat until heated through. Place in a casserole dish and cover with breadcrumbs. Bake in a 350 degree oven 25-30 minutes or until hot.

Turkey and Swiss Quiche

Unbaked Pie Shell 1

Eggs 6

Milk or Cream ¾ cup

Chopped or Shredded Turkey 2 cups

Shredded Swiss Cheese 1 ½ cups

Green Onion 2-3 Tbls

Line a pie dish with the unbaked pie crust. In a bowl, combine the turkey, Swiss cheese, and green onion. Place turkey mixture in pie dish. In another bowl beat the eggs and milk or cream together until well combined. Pour egg mixture over turkey mixture. Bake in a 350 degree oven 25 minutes or until the eggs are golden brown and cooked through.
